Cookin’ with Laura: Homemade Yam Fries


What is better than yam fries??? Nothing in my book! They are sooooo good and super healthy! I do not fry mine, but instead I roast them in a super-hot oven, so there is minimal oil involved! The recipe I follow is made by my very favorite chef: Laura Vitale! If you have not checked out her website, you should do so immediately (she is a genius, and I have a not-so-secret love affair with everything she cooks). Keep in mind that the only thing I change from her recipe is that I use yams and she uses sweet potatoes. Either is fine, but I think yams are much richer!

Recipe:
3-4 large yams, washed, dried and cut into wedges
2 Tbsp of Olive Oil
1 Tbsp of Chili Powder
Salt and Pepper, to taste

1) Preheat the oven to 450 degrees (F), line a baking sheet with aluminum foil and preheat it in the oven for 10 minutes.

2) In a large bowl, toss your yams with the oil, salt, pepper and chili powder.



3) Place them on a single layer on the hot baking sheet, and roast them in the hot oven for about 35 to 40 minutes or until golden brown and crispy.

4) Give them a toss half way through for even roasting.

I accompanied these sweet babies with some baby portabella sandwiches made with all kinds of super fresh veggies! What a satisfying meal!
