First day of classes!

I am full of all of the emotions that go along with the first day. Honestly, I don't think it changes from year to year; I feel the same as I did on the first day of kindergarten: excited, nervous, scared, ect.

Today was the first day that I had to pack two lunches instead of one. I decided to start packing lunches for two reasons: it is obviously less expensive (I can get away with around $1 per lunch, where even an inexpensive bought lunch in our area runs about $6), and I know exactly what goes into the food we eat as I make almost everything from scratch (something that is very important to us).

Here is a look at what we are having for lunch today:

1. Homemade vegetarian chili (left-over from yesterday's lunch)
2. Fresh pineapple and kiwi
3. Homemade trail mix
4. Homemade fruit tart (left-over from last nights dinner)

I have started packing everything in individual containers the night before, and refrigerating them overnight. This works so well because all I have to do in the morning is throw an ice pack in each of our lunch boxes and put in all of our lunch items from the fridge. It takes me approximately two minutes!

Isn't my lunch box cute? I got it at Ross for $4.99!

Well I better get a move on! Wish me luck!

  1. Good luck!!! This is such a good idea, I've always had problems getting John to take a packed lunch x_x. I think this will be something I'll push when he gets back ;)

    1. Hi Michelle. It's taken me awhile to figure out how to reply on here. New technology to me. I've been taking homemade soups for lunch full of veggies from the CSA I belong to here. They are very satisfying. So good to read how your life is going. I do miss you and Cole a lot! Love, Linda
