When you buy granola bars in the store they are normally full of high fructose corn syrup, and are quite expensive. I used to save money by buying them at outlet stores such as BigLots, or bulk stores like Costco, but after spending lots of money, and never really being satisfied with the products, I decided it was time to look into making my own granola bars. The first time I made them they turned out terrible! I used a recipe off of allrecipes.com; they were very crumbly, and far too sweet. After being discouraged for a while, I decided to check Laura Vitale's website to see if she had any ideas, and of course, she had an amazing recipe that turns out perfect every time!
These bars are quick and easy to put together, use a handful of ingredients which you probably already have in your pantry, and are so delicious! We make these once a week in our house, and you will find them in our lunch box on any given day! Let's walk through the steps:

Ingredients:
2 cups of Rolled Oats
½ cup of Flour
½ tsp of Baking Soda
1/3 cup of Unsalted Butter
1/2 cup of Honey
¼ cup of Brown Sugar
¼ tsp of Cinnamon
½ tsp of Vanilla Extract
1/8 tsp of Salt
2 cups of mixed nuts and dried fruit
Process:
1) Preheat your oven to 350 degrees, line a 8x9 square baking pan with parchment paper and spray with non stick cooking spray.
2) In a large bowl combine the oats, baking soda, cinnamon, salt, flour, and mixed nuts and fruit. Set aside.
3) In a small saucepan over medium heat, cook together the butter, honey and brown sugar, bring to a boil and turn the heat off. Add the vanilla and mix it in.
4) Pour the wet mixture over oat mixture and mix everything together to combine.
5) Pour mixture into prepared pan and make sure the mixture is evenly spread out.
6) Bake for about 25 to 30 minutes.
7) Cool completely for about 3 hours cutting into bars.
Definitely put these on your list to try if you like having granola bars on hand! You can change this recipe up however you like! Sometimes I like to have shredded coconut, and sunflower seeds in mine!
